Meat and Potatoes
Every now and then I look in my pantry and I have an exorbitant amount of potatoes sitting on the shelf. Now when this happens I do a little happy dance because I absolutely love potatoes. Mashed. Fried. Roasted. You name it, I'll eat it.
This happened to me the other day so I decided to whip up one of our favorite, and incredibly easy, dinners. This is definitely a hearty meat and potatoes kind of meal. I have searched and searched for the perfect sausage to buy for meals like this. I want something with a smokey flavor. And lo and behold there are tons of choices at the grocery store. I just needed to stop and smell the roses, or the sausage as it were.
Definitely a quick, easy, and incredibly delicious meal for any day of the week. I mean just look at the ridiculously short ingredient list!
Ingredients:
6 red potatoes
1 smokey/mesquite flavored sausage link
salt and pepper to taste
olive oil for 'frying'
Start by slicing your red potatoes into thin rounds about 1/8 to 1/4 inch thick. Lay those aside and slice your sausage link into 1/2 inch pieces. Add about a 1/4 inch of olive oil to your frying pan and heat on medium high heat. Lay each potato slice in the oil and 'fry' on each side for about 4 minutes or until golden brown. Sprinkle with salt and pepper. You may have to do this in batches as not all the potatoes may fit in your pan.
Heat another skillet to medium heat and add your sausage. Cook sausage until beginning to brown and heated through completely.
Pile your sausage and sliced potatoes on a plate and enjoy. Don't forget to whip up a veggie or salad to balance out this hearty meal.
