Ridiculously Easy Chicken Fajitas
You are not going to believe how easy this is. I almost couldn't believe it myself when I created it years ago. Anytime I ask Collin what he wants for dinner he always says fajitas. This recipe is ridiculously delicious, easy and quick.
Fajitas are a staple in our household thanks to this recipe. I usually make it with chicken but you could substitute beef if you are so inclined. You could also throw the scrumptious chicken over salad for a carb-free meal. It's oh so good!
Ingredients:
4-5 chicken breasts
Onion
2 TBSP Olive Oil
2 TBSP butter
Mrs. Dash Southwest Chipotle seasoning (secret weapon)
Salt and pepper to taste
Avocado
Grated cheddar cheese
Sliced black olives
Salsa
Flour our corn tortillas
Slice your raw chicken into equally sized pieces. Heat a skillet on medium high heat and add the olive oil and butter. Add the chicken to the pan. Sprinkle generously with Mrs. Dash Southwest Chipotle seasoning on all sides of the chicken pieces. It is salt free so add a few hits of salt if you would like. I usually don't and it tastes awesome.
Slice onion in half then slice into strips. Heat a skillet over medium high heat. Add 1 TBSP butter to pan. Cook onion until caramelized. Add a dash of salt and pepper. Sauté chicken until cooked through. And bam! dinner is served.
Top with avocado, cheese, olives, salsa and grated cheese.
